Pasta with Potatoes

Slice the potatoes 1/4 inch thick and toss them with a small amount of olive oil, salt and pepper. Spread them in a baking dish and roast in a pre-heated 400 F oven for about 15 minutes or until golden brown.

Wash the rocket, drain and set aside. Slice the red onion thinly. Peel and chop the garlic cloves and the rosemary. Boil salted water for the pasta. Begin boiling the pasta when the potatoes have finished roasting.

Saute the onions in olive oil for about 5 minutes or until translucent. Lower the heat and add the potatoes, garlic and rosemary and toss together for a minute. When the noodles are done drain them and add to the potatoes and onion along with the rocket. Add a squirt of lemon juice and toss everything together. Drizzle a bit of olive oil over it and serve.
